  • 1 pound ground beef
  • 1 can (15 oz) chili beans
  • 1 can (14.5 oz) diced tomatoes including juice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional) for spice
  • 1 tablespoon olive oil for cooking

  • In a large pot, heat olive oil over medium heat.
  • Add chopped onion and minced garlic; sauté until onions are translucent.
  • Add ground beef and cook until browned.
  • Stir in chili powder, cumin, salt, black pepper, and cayenne pepper (if using).
  • Add chili beans and diced tomatoes (including juice) to the pot; stir to combine.
  • Bring to a simmer and reduce heat; let cook for about 20-30 minutes, stirring occasionally.
  • Serve hot, topped with cheese, sour cream, and green onions as desired.

Notes

For a smokier flavor, try adding some diced smoked sausage. Adjust the spice level by varying the amount of cayenne pepper or using a milder chili powder. Letting the chili sit for a few hours or overnight in the fridge will enhance its flavors. This chili pairs well with cornbread or rice and is perfect with tortilla chips for dipping.
