  • 3 tbsp olive oil
  • 1 cup cherry tomatoes (halved)
  • ¼ cup red onion (diced)
  • ¼ cup cilantro (chopped) Optional for garnish.
  • 1 tbsp jalapeño (diced, optional) Add more for extra spice.
  • 1 tsp salt To taste.
  • ½ tsp pepper To taste.

Preparation

  • Cook the pasta according to package instructions, then drain and let cool.
  • In a large bowl, combine the cooled pasta, sweet corn, cherry tomatoes, red onion, and jalapeño.

Dressing

  • In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  • Pour the dressing over the pasta mixture and toss to combine.

Final Touches

  • Add chopped cilantro and toss gently.
  • Chill in the refrigerator for at least 30 minutes before serving.

Notes
