  • 8 oz pasta of your choice Any type of pasta works.
  • 1 lb smoked sausage, sliced Flavored sausage like Italian or Cajun can be used.
  • 1 bell pepper, diced Any color bell pepper is fine.
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth Vegetable broth or water can be substitutes.
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish Chopped for aesthetics.

Cooking

  • In a large skillet, cook the sausage over medium heat until browned.
  • Add the onion, bell pepper, and garlic; sauté until the vegetables are tender.
  • Pour in the diced tomatoes and chicken broth, and bring to a simmer.
  • Stir in the pasta and Italian seasoning; cook until the pasta is tender and the liquid is absorbed, about 10-12 minutes.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, warm in a skillet or microwave, adding a splash of chicken broth if needed. Feel free to switch up the vegetables or protein based on availability.
