Ingredients
  

For the Soup Base

  • 1 lb Italian sausage Can use ground turkey or chicken for a lighter option.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 28 oz canned crushed tomatoes
  • 4 cups chicken broth
  • 2 cups water
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 8 oz lasagna noodles, broken into pieces
  • 2 cups ricotta cheese Can be replaced with cottage cheese for a lighter version.
  • 2 cups shredded mozzarella cheese For garnish.

Garnish

  • Fresh basil or parsley For garnish.

Cooking the Soup

  • In a large pot, brown the sausage over medium heat. Drain excess fat.
  • Add chopped onion and minced garlic; sauté until the onion is translucent.
  • Stir in crushed tomatoes, chicken broth, water, basil, oregano, salt, and pepper. Bring to a boil.
  • Add broken lasagna noodles and cook until tender, about 10-12 minutes.
  • Stir in ricotta cheese until melted and combined.
  • Serve hot, topped with shredded mozzarella cheese and garnished with fresh basil or parsley.

Notes

This soup can be made ahead of time and stored in the refrigerator. Pair with warm garlic bread or a simple green salad for a complete meal. Consider adding a splash of red wine for extra flavor, and feel free to include spinach or kale for added nutrients.
