  • 1 cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon thyme
  • 1 cup frozen peas and carrots

Preparation

  • In a crock pot, add the ground beef, diced potatoes, chopped onion, and minced garlic.
  • Pour in the beef broth and stir to combine.
  • Season with salt, pepper, and thyme.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • About 30 minutes before serving, stir in the milk and frozen peas and carrots.
  • Let it finish cooking until the vegetables are tender.
  • Serve warm.

Notes

This soup pairs well with crusty bread or a side salad. You can top it with shredded cheese, fresh herbs, or a dollop of sour cream for extra flavor. For richer flavor, sauté the onions and garlic before adding to the crock pot. Fresh vegetables can be used but may need less cooking time. A thickening slurry can be used if a thicker soup is desired.
