Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Add diced onions and bell peppers; sauté until softened, about 5 minutes.

Cooking

  • Add ground beef, cooking until browned. Drain excess fat.
  • Stir in diced potatoes, garlic powder, salt, and pepper. Cook for about 10 minutes, stirring occasionally.
  • Pour in sloppy joe sauce; stir to combine and let simmer for another 10-15 minutes until potatoes are tender.
  • Top with shredded cheese if desired, and serve warm.

Notes

For a little extra heat, add some diced jalapeños or a dash of hot sauce. If you prefer a vegetarian option, substitute the ground beef with lentils or a meat alternative. Make sure not to overcrowd the pan to ensure the potatoes cook evenly. Store any leftovers in an airtight container in the refrigerator for up to three days.
