  • 2 pieces boneless, skinless chicken breasts Seasoned with salt, pepper, and Italian seasoning
  • 1 cup pasta (penne or fettuccine) Cook according to package instructions
  • 1 cup heavy cream
  • 1 cup chicken broth Can substitute with vegetable broth or water
  • 1 cup grated Parmesan cheese Adjust to taste
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning

  • 2 tablespoons olive oil For cooking chicken

Instructions
 

Preparation

  • Cook the pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt, pepper, and Italian seasoning. Cook the chicken for 6-7 minutes on each side until cooked through. Remove from the skillet and let rest.

Cooking

  • In the same skillet, add minced garlic and cook for 1-2 minutes until fragrant.
  • Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer.
  • Add grated Parmesan cheese to the skillet and stir until melted and creamy. Adjust seasoning with salt and pepper.
  • Slice the cooked chicken and add it back to the skillet along with the cooked pasta. Toss to combine and heat through.

Serving

  • Serve garnished with fresh basil.

Notes

Best served warm. Pair with a crisp green salad or garlic bread for a complete meal. For extra flavor, marinate the chicken in Italian dressing before cooking. If you prefer a thicker sauce, let it simmer for a few more minutes after adding the cheese. Feel free to add your favorite vegetables, like spinach or sun-dried tomatoes.
