  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons fresh rosemary, chopped
  • 2 teaspoons fresh thyme, chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and dry the potatoes. Place each potato between two chopsticks or wooden spoons, and make thin cuts across the top, being careful not to cut all the way through.

Mixing

  • In a small bowl, mix together the olive oil, minced garlic, rosemary, thyme, salt, and pepper.
  • Brush the mixture generously over each potato, making sure it gets into the slices.

Baking

  • Place the potatoes on a baking sheet and bake in the preheated oven for 45-55 minutes, or until crispy on the outside and tender on the inside.
  • Garnish with fresh parsley before serving.
