Main Ingredients

  • 2 cups edamame, shelled
  • 1 cup peanuts, roasted For added flavor, consider toasting the peanuts.
  • 1 medium red bell pepper, diced
  • ½ cup green onions, chopped

Dressing Ingredients

  • ¼ cup soy sauce Use tamari for a gluten-free option.
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste

Instructions
 

Preparation

  • Boil edamame in salted water for 5 minutes, then drain.
  • In a large bowl, combine edamame, peanuts, bell pepper, and green onions.

Dressing

  • In a separate bowl, whisk together soy sauce, sesame oil, rice vinegar, ginger, salt, and pepper.
  • Pour the dressing over the salad and toss well.

Chill

  • Chill in the refrigerator for at least 30 minutes before serving.

Notes

This salad can be served on its own as a light meal or as a side dish. Store leftovers in an airtight container in the refrigerator for up to 3 days for best taste.
