Ingredients

Main ingredients

  • 2 oranges 2 oranges
  • 1 cup 1 cup water (250 milliliters)
  • 1 cup 1 cup sugar (250 milliliters)
  • 3 ounces 3 ounces dark chocolate (70% cocoa content, 90 grams)

Instructions

Preparation

  • Wash the oranges thoroughly under running hot water.
  • Cut the top and bottom off each orange.
  • Make 4 or 5 vertical incisions running all the way from top to bottom of the peel and into the flesh.
  • Carefully remove the peel with your hands. Cut each piece into thin strips and put them in a pot.

Boiling the Peels

  • Pour about 2 cups of water over the peels and bring it to a boil. Boil for 5 minutes, then drain.
  • Add fresh water (2 cups) into the same pot and return the peels. Repeat the boiling process to remove some bitterness.

Candying the Peels

  • In a small saucepan, dissolve 1 cup of sugar in 1 cup of water. Add the peels and let them simmer for about 45 minutes, or until they become translucent.
  • Once done, spread the peels on a wire rack so the syrup can drip off. Let them cool completely.

Dipping in Chocolate

  • Melt the chocolate over a pot of simmering water.
  • Dip each peel in chocolate using a fork, then transfer it onto baking parchment or aluminum foil.
  • Let the chocolate set completely in the fridge for about an hour before enjoying.

Notes

Store your Chocolate Covered Orange Peels in an airtight container in the refrigerator. They can last for about a week. Keep them away from strong odors, as chocolate can absorb smells. Choose fresh oranges for the best flavor and good quality dark chocolate for better taste.
