  • 1 pound ground beef
  • 1 can kidney beans, drained and rinsed (15 oz)
  • 1 can black beans, drained and rinsed (15 oz)
  • 1 can diced tomatoes (28 oz)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 cup beef broth
  • 1 tablespoon olive oil

  • In a large pot, heat olive oil over medium heat.
  • Add chopped onion and garlic. Sauté until the onion is soft, about 3 minutes.
  • Add the ground beef, breaking it apart with a spoon. Cook until browned.
  • Stir in chili powder, cumin, paprika, salt, and pepper. Cook for 1 minute.
  • Add kidney beans, black beans, diced tomatoes, and beef broth.
  • Bring to a boil, then reduce heat. Let it simmer for 30 minutes, stirring occasionally.
  • Taste and adjust seasoning if needed.

Notes

For extra flavor, add a tablespoon of brown sugar or Worcestershire sauce. If you like more heat, toss in some diced jalapeños or a pinch of cayenne pepper. Feel free to substitute the ground beef with ground turkey or a veggie alternative for a lighter option. Let the chili cool completely for storage; it can be kept in the fridge for up to 4 days or frozen for up to 3 months.
