Ingredients
  

Main Ingredients

  • 1 whole whole chicken (about 3-4 pounds)
  • 8 cups chicken broth
  • 2 cups egg noodles
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon thyme

  • In a large pot, heat olive oil over medium heat.
  • Add onions, carrots, celery, and garlic. Sauté until vegetables soften.
  • Add the whole chicken and chicken broth to the pot.
  • Bring to a boil, then reduce heat and simmer for about 1 hour.
  • Remove the chicken, shred the meat, and return it to the pot.
  • Add egg noodles and thyme, and cook until noodles are tender.
  • Season with salt and pepper to taste, then serve hot.

Notes

Serve warm in bowls, garnished with fresh parsley or a sprinkle of black pepper. Pair with bread or salad. Store leftovers in an airtight container for 3-4 days in the fridge or freeze for up to 3 months.
