  • 12 ounces cheese tortellini
  • 1 pound thinly sliced beef Flank steak or sirloin preferred.
  • 1 each green bell pepper, sliced
  • 1 each onion, sliced
  • 2 tablespoons olive oil
  • 1 cup provolone cheese, shredded Can substitute with mozzarella or cheddar.
  • Salt and pepper to taste

Preparation

  • Cook the cheese tortellini according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat.
  • Add the sliced onion and green bell pepper. Sauté until softened.
  • Add the sliced beef to the skillet. Cook until browned.
  • Season with salt and pepper.
  • Add the cooked tortellini to the skillet and toss to combine.
  • Sprinkle the shredded provolone cheese over the top. Cover the skillet until the cheese melts.
  • Serve hot.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or a skillet over low heat. For added spice, consider jalapeños or hot sauce. For a vegetarian option, substitute beef with grilled mushrooms or tempeh.
