  • 1 cup cooked chicken, chopped Consider using leftover rotisserie chicken.
  • 1 cup mixed vegetables (peas, carrots, corn) Feel free to customize the vegetables.
  • 2 eggs beaten Scramble the eggs before adding to the dish.
  • 3 tablespoons soy sauce Substitute with tamari for a gluten-free option.
  • 2 tablespoons vegetable oil Use for cooking.
  • 2 green onions, sliced Add for flavor and garnish.
  • Salt and pepper Adjust to taste.

  • Heat vegetable oil in a large skillet or wok over medium-high heat.
  • Add the beaten eggs and scramble until fully cooked. Remove from the pan and set aside.
  • In the same pan, add more oil if necessary, and stir-fry the mixed vegetables until tender.
  • Add the cooked chicken and rice to the pan, mixing well.
  • Pour in the soy sauce, and stir to combine all ingredients.
  • Add the scrambled eggs and green onions, stirring until heated through.
  • Season with salt and pepper to taste. Serve hot.

Notes

Serve hot, optionally with spring rolls or a salad. Consider adding sesame seeds or extra green onions for garnish. Store leftovers in an airtight container for up to 3 days.
