  • 1 lb chicken breast, diced Use boneless, skinless chicken breast for best results.
  • 1 cup rice Jasmine or basmati rice is recommended.
  • 2 cups chicken broth Use gluten-free broth if needed.
  • 2 tablespoons olive oil
  • 2 lemons (juiced and zested) Fresh lemons are preferred for best flavor.
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Preparation

  • In a large skillet, heat olive oil over medium heat.
  • Add garlic and sauté until fragrant.
  • Add diced chicken, oregano, thyme, salt, and pepper. Cook until chicken is browned and cooked through.
  • Stir in rice and cook for another minute.
  • Add chicken broth, lemon juice, and zest. Bring to a boil.
  • Reduce heat, cover, and simmer for about 15-20 minutes or until rice is tender.
  • Garnish with fresh parsley before serving.

Notes

To store leftovers, let the dish cool completely. Place it in an airtight container and refrigerate; it will keep for 3-4 days. For longer storage, freeze it in a freezer-safe container for up to 2 months.
