  • 1 cup quinoa Rinse before cooking.
  • 2 cups vegetable broth or water
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 medium bell pepper, diced
  • ½ medium red onion, diced
  • ½ cup kalamata olives, pitted and sliced
  • ½ cup feta cheese, crumbled Can substitute with vegan cheese.
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

Preparation

  • Rinse the quinoa under cold water and drain.
  • In a medium saucepan, combine the quinoa and vegetable broth or water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and liquid is absorbed.
  • While the quinoa cooks, chop the cherry tomatoes, cucumber, bell pepper, and red onion.

Combining Ingredients

  • In a large bowl, combine the cooked quinoa with the chopped veggies, kalamata olives, and feta cheese.
  • Drizzle with olive oil and lemon juice, then season with salt and pepper to taste. Toss gently to combine.

Serving

  • Serve immediately or store in the refrigerator for meal prep. Garnish with fresh parsley before serving.

Notes

This quinoa bowl can be served warm or cold and is perfect as a main dish or a side. Store any leftovers in an airtight container in the refrigerator for 3-4 days.
