Ingredients
  

For the Shells and Filling

  • 12 pieces Jumbo pasta shells Cooked according to package instructions.
  • 1 cup Whipped cottage cheese
  • 2 cups Cooked spinach Squeeze excess water before mixing.
  • 2 cloves Garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Salt
  • ½ teaspoon Pepper

For the Baking

  • 2 cups Marinara sauce Additional sauce for topping.
  • ½ cup Grated Parmesan cheese For topping.

Preparation

  • Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
  • In a mixing bowl, combine whipped cottage cheese, cooked spinach, minced garlic, Italian seasoning, salt, and pepper.
  • Gently fill each cooked shell with the cottage cheese and spinach mixture.

Baking

  • Preheat the oven to 350°F (175°C).
  • Spread a layer of marinara sauce on the bottom of a baking dish. Place the stuffed shells in the dish and top with additional marinara sauce and grated Parmesan cheese.
  • Cover with aluminum foil and bake for 25-30 minutes.
  • Remove the foil in the last 10 minutes to allow the cheese to brown slightly.

Serving

  • Serve warm, garnished with additional Parmesan cheese and fresh basil or parsley.

Notes

Feel free to add vegetables like mushrooms or bell peppers to the filling for extra flavor. Substitute ricotta for cottage cheese for a lighter option. Make sure not to overcook the pasta shells.
