Mixed Vegetables

  • 2 cups mixed vegetables (e.g., zucchini, bell peppers, carrots, broccoli)

Base Ingredients

  • 1 cup cooked rice or quinoa
  • 1 can diced tomatoes (15 oz) Includes juice
  • 1 cup shredded cheese (e.g., cheddar, mozzarella) Divided in two
  • ½ cup vegetable broth

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper

For Greasing

  • to taste Olive oil For greasing the baking dish

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C). Grease a baking dish with olive oil.
  • In a large bowl, mix together the mixed vegetables, cooked rice or quinoa, diced tomatoes (with juice), half of the cheese, vegetable broth, garlic powder, onion powder, salt, and pepper.
  • Pour the mixture into the prepared baking dish and spread evenly.
  • Top with the remaining cheese.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until the vegetables are tender and the cheese is bubbly and golden.
  • Let it cool slightly before serving.

Notes

For added flavor, consider sautéing your vegetables briefly before mixing. Experiment with different cheeses or use dairy-free cheese for a vegan option. Add protein like cooked chicken, beans, or lentils for a heartier meal.
