  • 2 cups 2 cups unsalted butter, at room temperature Use softened at room temperature for best texture.
  • 1 tablespoon 1 tablespoon vanilla extract or vanilla bean paste Use high-quality vanilla for a richer flavor.
  • ½ teaspoon 1/2 teaspoon fine salt
  • 7 cups 7 cups powdered sugar (about a 2 lb bag) Adjust according to desired sweetness.
  • 3 tablespoons 3 tablespoons heavy whipping cream, at room temperature Add more if needed to adjust consistency.

Preparation

  • Place the butter in a large mixing bowl. Beat on medium speed with an electric mixer for about 30 seconds, until smooth and creamy.
  • Add the vanilla and salt. Mix just until combined.
  • Gradually add the powdered sugar, about 1 cup at a time, mixing on the lowest setting. When about halfway through, add in the cream to help it all come together.
  • Once all the sugar is added, mix on low for another minute or two, scraping the sides and bottom as needed, until everything is fully combined and the frosting is fluffy.
  • Check the texture: If it’s too thick, add another tablespoon of cream. If it’s too thin, add a bit more powdered sugar (a quarter cup at a time).
  • For the smoothest finish, use a spatula to stir the buttercream by hand for a minute—pressing it against the side of the bowl to remove air bubbles.
  • Your buttercream is ready to use! Spread it on cakes, cupcakes, or cookies, or store for later.

Notes

To store, place in an airtight container in the refrigerator. Lasts up to 2 weeks. Allow to come to room temperature before using.
