Ingredients
  

Main Ingredients

  • 1 lb ground beef Can be substituted with ground turkey or a plant-based meat alternative.
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes with green chiles
  • 1 packet taco seasoning Use spicy taco seasoning for a spicier flavor.

Cornbread Batter

  • 1 cup cornmeal
  • 1 cup milk
  • 1 large egg

Optional Toppings

  • 1 cup shredded cheese Optional, can be omitted for a lighter version.
  • Chopped cilantro for garnish Optional.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a skillet, cook the ground beef over medium heat until browned. Drain any excess grease.
  • Stir in the black beans, diced tomatoes, and taco seasoning. Mix well and let it simmer for about 5 minutes.
  • In a separate bowl, mix together the cornmeal, milk, egg, salt, and pepper to create the cornbread batter.

Assembly

  • Spread the beef mixture evenly in a greased baking dish.
  • Pour the cornbread batter on top of the beef mixture.
  • If using, sprinkle cheese on top.

Baking

  • Bake in the oven for 25-30 minutes or until the cornbread is cooked through and golden brown.
  • Allow to cool slightly before serving. Garnish with cilantro if desired.

Notes

Serve warm with a side salad, fresh avocado, or tortilla chips. Store leftovers in an airtight container for up to 3 days. Reheat in microwave or oven.
