  • 1 cup black beans, drained and rinsed Can use canned or cooked black beans.
  • 1 cup corn, drained Frozen or canned corn works well.
  • 1 cup diced tomatoes Fresh or canned diced tomatoes can be used.
  • 1 cup diced bell peppers Any color bell pepper is fine.
  • 1 cup shredded lettuce Iceberg or romaine lettuce for a crunchy topping.
  • ½ cup shredded cheese Cheddar, Monterey Jack, or a blend.
  • Sour cream (optional) For creamy topping.
  • Salsa (optional) Add for an extra flavor kick.

Instructions
 

Cooking the Meat

  • In a large skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat.
  • Add the taco seasoning to the meat along with the black beans and corn. Stir to combine.
  • Cook for about 5 minutes until heated through.

Assembling the Bowl

  • In serving bowls, layer the cooked rice, the meat mixture, diced tomatoes, bell peppers, and shredded lettuce.
  • Top with shredded cheese, salsa, and sour cream if desired.

Notes
