  • 4 large large baking potatoes Choose firm and unblemished potatoes.
  • 1 pound ground beef or turkey Ground turkey for a lighter option.
  • 1 packet taco seasoning Use your favorite brand.

Toppings

  • 1 cup shredded cheese Cheddar or Mexican blend.
  • 1 cup sour cream Optional: Greek yogurt for a healthier option.
  • 1 cup diced tomatoes Fresh tomatoes add great flavor.
  • 1 cup shredded lettuce Iceberg or Romaine works well.
  • ½ cup sliced black olives Optional for added flavor.
  • ¼ cup chopped green onions Adds freshness and color.
  • to taste Salt and pepper Adjust according to preference.

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and poke holes in the baking potatoes. Bake in the preheated oven for 45-60 minutes, until tender.
  • While the potatoes are baking, cook the ground beef or turkey in a skillet over medium heat until browned. Drain excess fat.
  • Add the taco seasoning to the meat, following package instructions, and mix until well combined.

Assembly

  • Once the potatoes are done, let them cool slightly before slicing them open.
  • Fluff the insides of the potatoes with a fork, then add the seasoned meat.
  • Top with shredded cheese, sour cream, diced tomatoes, lettuce, olives, and green onions.
  • Serve warm and enjoy your flavorful Taco Potatoes!

Notes

Store leftovers in airtight containers. Baked potatoes can be stored in the fridge for up to 3 days. Reheat before serving. Consider adding hot sauce or salsa for extra flavor. Sweet potatoes can be used as a substitute.
