Ingredients
  

Chicken and Seasonings

  • 1 pound chicken breast Use boneless for easier cooking.
  • 1 tablespoon olive oil For cooking the chicken.
  • 1 teaspoon chili powder Adjust to taste.
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste none Salt

Corn Mixture

  • 2 cups corn kernels Fresh or frozen, thawed if frozen.
  • ½ cup cotija cheese Can substitute with feta if needed.
  • ¼ cup fresh cilantro, chopped For garnish and flavor.
  • 1 whole Juice of 1 lime Fresh lime juice preferred.

Instructions
 

Cooking Chicken

  • Heat olive oil in a pan over medium heat.
  • Season the chicken with chili powder, garlic powder, paprika, and salt.
  • Cook the chicken for about 6-7 minutes on each side until fully cooked.
  • Remove the chicken from the pan and let it rest.

Preparing Corn Mixture

  • In the same pan, add corn and cook for 5 minutes until slightly charred.
  • Add lime juice, cotija cheese, and cilantro to the corn and mix well.

Serving

  • Slice the chicken and serve it topped with the corn mixture.

Notes

To store leftovers, place the chicken and corn mixture in an airtight container. It can last in the refrigerator for up to 3 days. Reheat in a pan over low heat or in the microwave until warmed through. Marinate chicken for added flavor, and adjust spice levels to preference.
