  • 1 cup green split peas Rinsed before use
  • 1 piece leftover ham bone Adds flavor to the soup
  • 2 medium carrots, diced
  • 1 medium onion, chopped
  • 2 medium potatoes, diced
  • 4 cups chicken broth Can be replaced with vegetable broth for a vegetarian version
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 leaf bay leaf
  • 1 tablespoon olive oil For sautéing

Preparation

  • Rinse the split peas under cold water and set aside.
  • In a large pot, heat olive oil over medium heat.
  • Add the chopped onion and sauté until translucent, about 5 minutes.
  • Stir in the diced carrots and potatoes, cooking for another 5 minutes.

Cooking

  • Add the ham bone, split peas, chicken broth, salt, pepper, and bay leaf.
  • Bring to a boil, then reduce the heat and simmer for about 1 to 1.5 hours, or until the peas are tender.
  • Remove the ham bone, shred any meat back into the soup, and discard the bone.
  • Adjust seasoning as needed and serve hot.

Notes

Serve hot garnished with fresh herbs like parsley. Pairs well with crusty bread or a simple salad. For a thicker texture, blend a portion of the soup and stir it back in. You can also freeze leftovers for about 3 months. Thaw in the refrigerator before reheating.
