Ingredients

Crust

  • 30 pieces chocolate sandwich cookies, crushed
  • ½ cup melted butter

Chocolate Layer

  • ⅓ cup heavy cream
  • 5 oz semi-sweet chocolate, chopped

Cheesecake Layer

  • 8 oz cream cheese, softened
  • 7 oz marshmallow fluff
  • 8 oz whipped topping, thawed
  • 2 tbsp milk
  • 4 small boxes white chocolate pudding mix
  • 4 ½ cups milk
  • Mint syrup or mint extract to taste
  • Green food coloring (optional)
  • 8 oz whipped topping, thawed for topping

Instructions

Preparation

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix the crushed cookie crumbs with the melted butter in a bowl and press the mixture firmly into a baking dish to form the crust. Bake for about 10 minutes or until fragrant; then let it cool completely.

Chocolate Layer

  • In a small saucepan, heat the heavy cream and semi-sweet chocolate over medium heat until smooth. Pour this chocolate mixture over the cooled crust and chill it in the refrigerator until set.

Cheesecake Layer

  • In a large mixing bowl, beat the softened cream cheese until smooth. Gradually mix in the marshmallow fluff, whipped topping, and milk until light and creamy.
  • Prepare the white chocolate pudding as per the package instructions using 4 1/2 cups of milk until thick. Incorporate the mint flavoring and green food coloring if desired.
  • Layer the cheesecake mixture and mint pudding into the dish, alternating layers. Repeat until the dish is filled.
  • Spread the remaining whipped topping over the top of the layers and refrigerate for at least four hours before slicing.

Notes

Ensure your cream cheese is at room temperature for easier mixing. Feel free to adjust the mint flavor to your taste by adding more or less mint extract. For a thicker cheesecake layer, use less milk when preparing the pudding. Store any leftover cheesecake in the refrigerator for 3-5 days and cover well to prevent drying out.
