  • 2 large cucumbers
  • ΒΌ cup rice vinegar
  • 2 tablespoons soy sauce Use gluten-free if needed.
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon sesame seeds
  • 2 stalks green onions, chopped

Preparation

  • Slice the cucumbers thinly and place them in a large bowl.
  • In a separate bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, garlic, and ginger until well combined.
  • Pour the dressing over the cucumbers and toss to coat.
  • Let the salad sit for about 10-15 minutes to allow the flavors to meld.
  • Sprinkle sesame seeds and chopped green onions on top before serving.

Notes

Best served chilled. Pair with grilled meats or seafood. Store leftovers in an airtight container for up to 2-3 days.
