Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • ½ cup brown sugar Pack firmly when measuring
  • ¼ cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Wet Ingredients

  • ½ cup unsalted butter, melted Allow to cool slightly before adding
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup buttermilk Can be substituted with regular milk
  • 1 cup chopped pecans Toasting enhances flavor if desired

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, whisk together the flour, brown sugar, granulated sugar, baking powder, baking soda, and salt.
  • In another bowl, combine the melted butter, eggs, vanilla extract, and buttermilk.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Fold in the chopped pecans.
  • Divide the batter evenly among the muffin cups.

Baking

  • Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Allow to cool slightly before removing from the tin and serve warm.

Notes

Store any leftover pecan muffins in an airtight container at room temperature for up to three days. For longer storage, consider freezing them wrapped tightly in plastic wrap.
