  • ½ cup Feta cheese, crumbled For a variation, substitute goat cheese for feta.

Vinaigrette

  • ¼ cup Olive oil
  • 2 tablespoons Balsamic vinegar
  • ½ teaspoon Salt
  • ¼ teaspoon Pepper

Preparation

Notes

This salad is best enjoyed fresh. If you have leftovers, store them in an airtight container in the fridge but keep in mind that the arugula may wilt and become soggy due to the dressing. It’s best to keep the dressing separate and mix it in just before serving. For extra sweetness and color, add sliced strawberries or blueberries.
