  • 12 ounces pasta (penne or rotini) Choose your favorite pasta shape
  • 3 cups beef broth Can substitute with vegetable broth for vegetarian version
  • 1 can diced tomatoes (14.5 ounces) No salt added tomatoes can be used for less sodium

  • Chopped cilantro or green onions for garnish

Instructions

Preparation

  • In a large pot, brown the ground beef over medium heat with the diced onion and minced garlic until the beef is cooked through. Drain excess fat if necessary.
  • Stir in the taco seasoning and cook for 1-2 minutes until fragrant.

Cooking

  • Add the pasta, beef broth, diced tomatoes, and corn to the pot. Stir to combine. Bring to a boil.
  • Reduce heat to low, cover, and let it simmer for about 15-20 minutes, or until the pasta is cooked al dente. Stir occasionally to prevent sticking.
  • Once the pasta is cooked, remove from heat and stir in the shredded cheese until melted.

Notes

This dish pairs well with a side salad or tortilla chips. For added creaminess, consider topping it with a dollop of sour cream or sliced avocado.
