  • 2 lbs beef shank or short ribs Choose bone-in cuts for richer flavor.
  • 8 cups water
  • 2 pieces carrots, chopped Adds sweetness and nutrition.
  • 2 pieces potatoes, peeled and cubed
  • 1 piece onion, quartered Enhances the broth flavor.
  • 2 ears corn, cut into halves Provides sweetness.
  • 2 pieces zucchinis, sliced Adds vegetable flavor.
  • 1 bunch cilantro, chopped For garnish.
  • to taste Salt Adjust seasoning to preference.

Preparation

  • In a large pot, add the beef and water. Bring to a boil and skim off any foam that forms on the surface.
  • Add the onion and some salt, then let it simmer for about 1 to 1.5 hours until the meat is tender.
  • Add the chopped carrots, potatoes, and corn. Cook for another 20 minutes.
  • Then add the zucchini and continue cooking until it's tender.
  • Season with additional salt and pepper to taste.
  • Serve hot, garnished with chopped cilantro and lime wedges on the side.

Notes

For an extra layer of flavor, roast the beef bones in the oven for about 30 minutes before adding them to the pot. Feel free to add other vegetables like leeks or celery for more depth. Always taste and adjust seasoning at the end of cooking to suit your preference.
