Casserole Filling

  • 3 cups cooked chicken, shredded Rotisserie chicken works well
  • 1 cup cream cheese, softened
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 cup mixed vegetables (like peas and carrots) Feel free to swap for favorites like broccoli or spinach
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper

Topping

  • 2 cups crushed crackers For topping
  • ½ cup melted butter For topping

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the cooked chicken, cream cheese, sour cream, cream of chicken soup, cheddar cheese, mixed vegetables, garlic powder, onion powder, salt, and pepper. Mix well.
  • Pour the mixture into a greased 9x13 inch baking dish.
  • In a separate bowl, combine the crushed crackers and melted butter. Sprinkle this mixture over the top of the casserole.

Baking

  • Bake in the preheated oven for 30-35 minutes, or until bubbly and golden on top.

Serving

  • Allow to cool for a few minutes before serving. Serve hot from the oven.

Notes

Pairs well with a simple green salad or garlic bread. Add fresh herbs like parsley or chives on top before serving. Leftovers can be stored in the refrigerator for up to 3 days, or frozen before baking for quick meals.
