Ingredients
  

Main Ingredients

  • 2 lbs beef (chuck or stew meat)
  • 4 medium potatoes (peeled and diced)
  • 1 onion (chopped)
  • 3 cloves garlic (minced)
  • 2 cups beef broth
  • 1 tsp cumin
  • 1 tsp paprika
  • to taste Salt and pepper
  • 2 tbsp vegetable oil
  • Fresh cilantro (for garnish)

Instructions
 

Preparation

  • Heat the vegetable oil in a large pot over medium heat.
  • Add the chopped onion and garlic, sauté until translucent.
  • Add the beef to the pot, browning on all sides.

Cooking

  • Pour in the beef broth, cumin, paprika, salt, and pepper. Stir well.
  • Bring to a boil, then reduce heat to low and simmer for 1 hour.
  • Add the diced potatoes, cover, and continue to simmer for another 30-40 minutes, or until the meat and potatoes are tender.
  • Adjust seasoning as needed and garnish with fresh cilantro before serving.

Notes

Pairs beautifully with a simple green salad or crusty loaf of bread. Store leftovers in an airtight container in the refrigerator for up to 3 days. It can also be frozen for up to 3 months.
