Slaw Ingredients

  • 2 cups green cabbage, shredded
  • 1 cup red cabbage, shredded
  • 1 cup carrots, grated
  • 1 ripe mango, diced
  • ½ cup red bell pepper, diced
  • ¼ cup cilantro, chopped

Dressing Ingredients

  • 2 juices limes Juice of 2 limes
  • 2 tablespoons honey or agave nectar Use agave for a vegan version
  • to taste Salt
  • to taste Pepper

Preparation

  • In a large bowl, combine the green cabbage, red cabbage, carrots, mango, red bell pepper, and cilantro.
  • In a small bowl, whisk together the lime juice, honey or agave nectar, salt, and pepper.
  • Pour the dressing over the slaw and toss gently to combine.
  • Allow the slaw to sit for 10 minutes to let the flavors meld.
  • Serve chilled or at room temperature alongside grilled dishes or tacos.

Notes

For added crunch, consider including sliced almonds or sunflower seeds. Adjust the sweetness by using more or less honey/agave nectar based on your preference. Add a pinch of cayenne pepper for some heat. If you have leftovers, store them in an airtight container in the refrigerator and consume within 2-3 days.
