  • 2 cups rolled oats
  • ½ cup honey or maple syrup Maple syrup for a vegan option.
  • ½ cup almond butter or peanut butter Substitute with sunflower seed butter for nut allergies.
  • 1 tsp vanilla extract
  • ½ tsp salt
  • ½ tsp cinnamon (optional) Adds extra flavor, use if desired.
  • ½ cup nuts or seeds (optional) For added crunch.

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  • In a large mixing bowl, combine the oats, diced mangoes, honey or maple syrup, almond or peanut butter, vanilla extract, salt, and cinnamon if using. Mix until well combined.
  • Transfer the mixture into the prepared baking dish, pressing it down firmly to create an even layer.

Baking

  • Bake for about 20-25 minutes, or until the edges are golden brown.
  • Allow to cool completely before cutting into squares or bars.

Notes

Store in an airtight container at room temperature for up to 3 days, in the refrigerator for up to a week, or freeze for up to 2 months. Ripeness of mangoes is key for flavor. Customize with add-ins like dried fruit or coconut flakes.
