Ingredients

  • 2 cups macaroni Cooked according to package instructions
  • 1 cup mayonnaise
  • ½ cup chopped celery
  • ½ cup diced bell pepper Use red, yellow or green for color
  • ¼ cup chopped onion Red or yellow onion can be used

Seasoning and Dressing

  • 1 tablespoon vinegar Add more for tanginess if desired
  • 1 teaspoon salt Adjust to taste
  • ½ teaspoon black pepper Adjust to taste

Preparation

  • Cook macaroni according to package instructions. Drain and let cool.
  • In a large bowl, mix mayonnaise, vinegar, salt, and pepper.
  • Add cooled macaroni, celery, bell pepper, and onion to the dressing.
  • Toss until well combined.
  • Chill in the refrigerator for at least 1 hour before serving.

Notes

Serve macaroni salad cold. It's a great side dish alongside grilled meats or served on its own for a light meal. Garnish with fresh herbs like parsley for an extra touch. Keep any leftovers in an airtight container in the refrigerator for up to 3 days. If the salad seems dry after a day in the fridge, add more mayonnaise before serving.
