  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon lemon pepper seasoning
  • 1 cup fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a large baking dish, combine orzo pasta, vegetable broth, heavy cream, lemon pepper seasoning, and salt and pepper.
  • Stir in the fresh spinach and halved cherry tomatoes.

Baking

  • Cover the baking dish with foil and bake for 25 minutes.
  • Remove the foil, sprinkle shredded mozzarella cheese on top, and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Serving

  • Let it cool slightly before serving. Garnish with fresh parsley.

Notes

This casserole can be served as a main dish or a side. For added flavor, consider mixing in leftovers like grilled chicken or shrimp. For a spicy kick, add a pinch of red pepper flakes. For a vegan version, use coconut cream and dairy-free cheese.
