Ingredients

  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Wet Ingredients

  • ½ cup unsalted butter, softened Ensure the butter is softened but not melted.
  • ½ cup milk
  • 1 large egg
  • 1 tablespoon lemon zest
  • ½ cup blueberries (fresh or frozen) If using frozen, do not thaw before mixing.

Glaze

  • ½ cup powdered sugar
  • 1 tablespoon lemon juice

Preparation

  • Preheat your oven to 350°F (175°C) and grease a baking pan.
  • In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, cream together the butter, milk, egg, and lemon zest.
  • Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Gently fold in the blueberries.

Baking

  • Pour the batter into the prepared pan and spread evenly.
  • Bake for 25-30 minutes or until golden and a toothpick comes out clean.

Glazing

  • For the glaze, mix powdered sugar with lemon juice until smooth, then drizzle over the cooled buns.

Notes

To keep your buns fresh, store them in an airtight container at room temperature for up to 3 days. Refrigerate for up to a week. Reheat in the microwave for a few seconds before serving again. You can substitute blueberries with raspberries or strawberries for different flavors, or use a cream cheese frosting instead of glaze.
