  • 6 pieces hard-boiled eggs Cook eggs to hard-boiled
  • ¼ cup mayonnaise
  • 2 tablespoons sour cream
  • 2 tablespoons Dijon mustard Can substitute with yellow mustard
  • 1 piece jalapeno pepper, finely chopped Remove seeds for less heat
  • ½ teaspoon garlic powder
  • to taste Salt
  • to taste Pepper
  • ¼ cup shredded cheddar cheese Can substitute with pepper jack
  • 2 tablespoons crispy bacon bits Omit for vegetarian option
  • as needed Chopped green onions for garnish

Instructions
 

Preparation

  • Slice the hard-boiled eggs in half lengthwise and scoop out the yolks into a mixing bowl.
  • Add mayonnaise, sour cream, Dijon mustard, chopped jalapeno, garlic powder, salt, and pepper to the yolks and mix until smooth.
  • Stir in shredded cheddar cheese and bacon bits.
  • Spoon or pipe the yolk mixture back into the egg white halves.
  • Garnish with chopped green onions.
  • Serve chilled or at room temperature.

Notes

Store leftovers in an airtight container in the refrigerator. Best eaten within 2 to 3 days. For added flair, serve with extra sliced jalapenos on the side.
