  • 1 tablespoon olive oil For cooking the sausage
  • 1 medium onion, chopped Adds flavor to the base

  • 4 cups chicken broth Base of the soup
  • 1 cup diced tomatoes Canned tomatoes work well
  • 1 teaspoon Italian seasoning Adds Italian flavor

  • 1 pound gnocchi Can use fresh or frozen gnocchi
  • 2 cups fresh spinach Wilt down into the soup

Cooking

  • In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned.
  • Add the onion and garlic, cooking until the onion is translucent.
  • Pour in the chicken broth and diced tomatoes, then stir in the Italian seasoning, salt, and pepper. Bring to a boil.
  • Once it’s boiling, add the gnocchi and cook according to package instructions until they float to the top.
  • Stir in the fresh spinach and cook until wilted.
  • Serve hot, topped with grated Parmesan cheese.

Notes

For a spicier flavor, use hot Italian sausage instead of sweet sausage. To enhance the soup’s flavor, let it simmer for an extra 10-15 minutes. You can also add other vegetables like carrots or celery for more texture. To store leftovers, refrigerate for up to 3 days or freeze for up to 3 months. Reheat gently before serving.
