Ingredients for the Salmon

  • 4-6 oz Salmon fillets, about 4 to 6 ounces each (skin on or off)
  • 2 tbsp Butter, preferably unsalted So you can control the salt
  • 2 cloves Garlic, minced Fresh is best, but jar garlic works in a pinch
  • ΒΌ cup Honey Any kind you like
  • 1 lime Lime juice and a little zest Fresh lime tastes brighter
  • to taste Salt and black pepper
  • to taste Red pepper flakes, optional For a tiny kick
  • to taste Chopped parsley or cilantro, optional For a fresh finish

Preparation

  • Pat the salmon dry with a paper towel and season both sides with salt and pepper.
  • Heat a skillet on medium heat and add a small bit of butter. Sear the salmon without moving it for a few minutes until it gets a little golden.
  • Lower the heat and add the remaining butter to the pan. Stir in the garlic and cook for 20 to 30 seconds until fragrant.
  • Add honey and lime juice to the pan, stirring until the sauce is glossy.
  • Spoon the sauce over the salmon repeatedly for another minute or two. If the fillets are thick, cover the pan for a couple of minutes. The salmon should flake easily with a fork.

Notes

Store leftover salmon in an airtight container in the fridge and consume within 2 days. Reheat gently in a skillet with a splash of water for the best results.
