Ingredients
  

Main Ingredients

  • 4 pieces Salmon fillets Fresh or thawed if frozen
  • 2 tbsp Olive oil Extra virgin is recommended
  • 1 tsp Salt To taste
  • 1 tsp Pepper To taste
  • 1 tsp Garlic powder For seasoning

Vegetables

  • 2 cups Broccoli florets Fresh or frozen
  • 2 pieces Bell peppers Sliced
  • 2 pieces Carrots Sliced
  • 1 pieces Lemon wedges For garnishing
  • 1 tbsp Fresh herbs Optional for garnish

Preparation

  • Preheat your oven to 400°F (200°C).
  • On a sheet pan, arrange the salmon fillets and chop the vegetables.
  • Drizzle olive oil over the salmon and vegetables.
  • Season everything with salt, pepper, and garlic powder.
  • Toss the vegetables to coat them evenly and arrange them around the salmon.
  • Place lemon wedges on top of the salmon.

Cooking

  • Bake for 15-20 minutes or until the salmon is cooked through and the veggies are tender.
  • Garnish with fresh herbs if desired and serve.

Notes

For added flavor, consider marinating the salmon in a mixture of olive oil, lemon juice, and herbs for about 30 minutes before cooking. You can use any vegetables you have on hand as long as they have similar cooking times to the salmon. For a crispy texture, broil the salmon for the last few minutes of cooking. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
