  • 1 teaspoon vanilla extract

Preparation

  • Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  • Add the eggs, one at a time, mixing well after each addition.
  • Stir in the coconut milk, crushed pineapple, shredded coconut, and vanilla extract.
  • In a separate bowl, whisk together the flour and baking powder. Gradually add this mixture to the wet ingredients, stirring until just combined.
  • Divide the batter evenly between the prepared cake pans.

Baking

  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Frosting and Serving

  • Once cooled, frost the cake with cream cheese frosting and decorate with tropical decorations.
  • Serve at room temperature or chilled, and enjoy with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

For best results, measure ingredients accurately. You can substitute fresh pineapple for canned for added flavor. If cream cheese frosting isn't your preference, try whipped cream or coconut frosting. Decorate with tropical fruits for a festive look.
