  • 1 pound ground beef
  • 1 cup uncooked rice
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 cup beef broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • 1 cup shredded cheese

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet, brown the ground beef over medium heat. Drain excess fat.
  • Add onion and garlic to the skillet, cooking until softened.
  • Stir in diced tomatoes, kidney beans, beef broth, rice, chili powder, cumin, salt, and pepper.
  • Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
  • Transfer the mixture to a baking dish and top with shredded cheese.

Baking

  • Bake for 25-30 minutes or until the rice is cooked and the cheese is melted.

Notes

Serve warm on its own or with a simple salad or bread. To store leftovers, let the casserole cool completely, then transfer to an airtight container and refrigerate for up to 3-4 days. Can be frozen for longer storage. Feel free to add more veggies or use different types of cheese for variations.
