Ingredients
  

Cookie Base

  • 1 cup granulated sugar
  • ¼ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¼ cup cocoa powder
  • Green food coloring Adjust for desired color

  • Powdered sugar for coating

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, whisk together the granulated sugar and vegetable oil until combined.
  • Beat in the eggs and vanilla extract until smooth.
  • In another bowl, mix the flour, baking powder, salt, and cocoa powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Stir in green food coloring until you reach your desired color.
  • Chill the dough in the refrigerator for about 30 minutes.

Baking

  • Scoop tablespoon-sized portions of dough, roll them into balls, and then roll them in powdered sugar to coat.
  • Place on a baking sheet lined with parchment paper.
  • Bake for 10-12 minutes, until puffed and crinkled.
  • Allow cooling on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to one week. Freeze for up to three months. Thaw at room temperature before serving.
