  • 6 large eggs
  • 1 cup heavy cream

Fillings

  • 1 cup goat cheese, crumbled
  • 2 pieces leeks, cleaned and sliced Use the white and light green parts
  • ½ cup shredded cheese (e.g., Swiss or cheddar) For topping
  • Salt and pepper to taste
  • Fresh herbs (e.g., thyme or chives) for garnish

Preparation

  • Preheat the oven to 375°F (190°C).
  • Roll out the pie crust in a pie dish and bake for about 10 minutes until just golden.
  • In a skillet, sauté the leeks over medium heat until softened.
  • In a bowl, whisk together eggs, cream, salt, and pepper.
  • Spread the sautéed leeks and crumbled goat cheese evenly over the pie crust.
  • Pour the egg mixture over the cheese and leeks, and sprinkle with shredded cheese.

Baking

  • Bake for 30-35 minutes or until the filling is set and golden.
  • Allow to cool slightly before slicing.
  • Garnish with fresh herbs before serving.
