  • 1 lb chicken breast, cut into bite-sized pieces
  • ¼ cup cornstarch
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 inch ginger, minced

Sauce ingredients

  • ¼ cup soy sauce
  • ¼ cup chicken broth
  • ¼ cup sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil

Garnish

  • 2 green onions, sliced for garnish
  • Sesame seeds for garnish

Instructions
 

Preparation

  • In a bowl, toss the chicken pieces with cornstarch until evenly coated.

Cooking

  • Heat the oil in a large skillet or wok over medium-high heat. Add the chicken and cook until golden brown and crispy. Remove and set aside.
  • In the same skillet, add garlic and ginger, sautéing for about 30 seconds.
  • In a separate bowl, mix together the soy sauce, chicken broth, sugar, rice vinegar, hoisin sauce, and sesame oil. Pour this mixture into the skillet and bring to a boil.
  • Add the cooked chicken back into the skillet and toss to coat in the sauce.
  • Cook for an additional 2-3 minutes until the sauce thickens.

Serving

  • Garnish with green onions and sesame seeds. Serve hot with rice.

Notes

To store leftovers, let the chicken cool completely. Transfer it to an airtight container and refrigerate for up to 3 days or freeze for up to 2 months. For extra crunch, double fry the chicken. Adjust sweetness to your preference by varying sugar. Add vegetables like bell peppers for more color.
