Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, mix the olive oil, garlic, lemon juice, lemon zest, thyme, salt, and pepper.
  • Add the chicken thighs and potatoes to the bowl, tossing to coat them in the marinade.

Cooking

  • Arrange the chicken and potatoes in a single layer in a baking dish.
  • Bake for 35-40 minutes or until the chicken is cooked through and the potatoes are tender.
  • Garnish with fresh parsley before serving.

Notes

Serve with a fresh green salad or steamed vegetables. You can also add vegetables like carrots or green beans for roasting. For extra kick, consider adding red pepper flakes to the marinade. Always check that the chicken reaches an internal temperature of 165°F (75°C).
