Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and dry the potatoes, then make thin slices along the potatoes, being careful not to cut all the way through.
  • In a small saucepan, melt the butter over medium heat and add the minced garlic and chopped herbs, cooking until fragrant.
  • Brush the garlic herb butter mixture generously over the potatoes, ensuring some of it seeps into the slices.
  • Season with salt and pepper.
  • Drizzle the potatoes with olive oil.

Cooking

  • Place the potatoes on a baking sheet and roast in the oven for about 45-60 minutes, or until crispy on the outside and tender on the inside.
  • Serve warm and enjoy!

Notes

Best served hot, straight from the oven. Can be paired with grilled meats or roasted vegetables. Top with cheese or additional herbs for extra flavor. For storage, let cool completely and store in an airtight container for 3-5 days. Reheat at 350°F (175°C) for 15-20 minutes.
