Ingredients
  

Steak Preparation

  • 1 pound Ribeye or other steak cut Recommended cuts are ribeye, New York strip, sirloin, or filet.
  • 2 tablespoons Unsalted butter Salted butter can be used, but taste before adding more salt.
  • 3 cloves Garlic, minced Fresh minced garlic is preferred.

Cream Sauce

  • 1 cup Heavy cream Half and half can be used for a thinner sauce.
  • 1 cup Freshly grated Parmesan Freshly grated is best to avoid a gritty texture.
  • to taste Salt Taste prior to adding as Parmesan is salty.
  • to taste Black pepper
  • a pinch Italian seasoning or dried parsley Optional for added flavor.

Optional Add-Ons

  • 1 teaspoon Red pepper flakes For heat.
  • 1 slice Lemon For adding brightness to the sauce.
  • 1 tablespoon Cream cheese For extra thickness.

Instructions
 

Preparation

  • Take the steak out of the fridge 20 to 30 minutes before cooking and pat it dry with paper towels.
  • Season the steak generously with salt and pepper on both sides.

Cooking the Steak

  • Heat a skillet over medium-high heat and add a small splash of oil.
  • Place the steak in the skillet without moving it around, until it forms a deep brown crust.
  • Flip the steak, add butter and minced garlic, and baste the steak with melted butter for about a minute.

Making the Sauce

  • Transfer the steak to a plate and let it rest.
  • In the same skillet, lower the heat to medium-low, adding more butter if needed, and pour in the cream.
  • Stir and scrape up the browned bits, then slowly add Parmesan, stirring until melted.
  • If the sauce is too thick, add a splash of cream; if too thin, let it simmer gently for an additional minute.

Serving

  • Slice the steak against the grain and pour the parmesan cream sauce over the top.
  • Add a sprinkle of cracked black pepper before serving.

Notes

Serve with sides like mashed potatoes, roasted vegetables, or toasted bread to mop up the sauce. Do not rush the resting time for the steak.
