  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1 can diced tomatoes Can use seasoned tomatoes for extra flavor.
  • 1 packet taco seasoning Choose your favorite brand.
  • 2 cups shredded cheese Cheddar or a cheese blend works well.
  • 4 cups Fritos Classic Fritos provide the best crunch.
  • 1 can black beans Optional for an extra protein boost.
  • 1 cup corn Optional, can use frozen or canned.

Serving Suggestions

  • 1 cup sour cream For serving, optional.
  • 1 bunch green onions Sliced, for garnish, optional.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  • Add the diced tomatoes and taco seasoning to the skillet and stir well. Cook for about 5 minutes until heated through.

Assembly

  • In a large baking dish, layer half of the Fritos on the bottom.
  • Pour the beef mixture over the Fritos evenly.
  • Sprinkle half of the cheese over the beef mixture.
  • Add another layer of Fritos, followed by the remaining beef mixture.
  • Top with the remaining cheese.

Baking

  • Bake in the preheated oven for approximately 20-25 minutes, or until the cheese is melted and bubbly.
  • Remove from oven and let it cool for a few minutes before serving.

Notes

For added flavor, consider mixing in some sautéed onions or bell peppers with the beef. Store leftovers in an airtight container for up to 3 days.
